Some final gems from our short, but sweet time in Montreal:
- Trying to replicate our incredible time in Mexico, this is one of my favourites: Mexican spice crusted salmon filet with a ‘fiesta’ salad (chickpeas, corn, hardboiled eggs, red onions, cucumbers, and cherry tomatoes on a bed of romaine lettuce) with homemade lime, ranch and cilantro dressing.
- Teriyaki beef sautee with mushrooms, carrots and rice noodles
- Classic linguine with fresh pesto and pine nuts paired with ‘Les Jamelles’ sauvignon blanc
- Classic Vegetarian Lasagna
- Thai chicken sautés with 6-bean blend, corn, red onion, and feta salad, grilled asparagus, balsamic mushrooms, and sautéed peppers all done on the BBQ to give a warm welcome to summer!
- Pork souvlaki salad with cucumbers and homemade tzatiki ‘dressing’
- ‘Not so replica’ Caprese Salad (i.e. me trying to recreate the salad from Mexico, which did go the way I planned!) with caramelized onions and grilled chicken
- Pork loin with rice noodles and carrots paired with Wolf Blass Cabernet Sauvignon
- Vegetable stir-fry with broccoli, carrots, zucchini, onion, red pepper and mushroom in a teriyaki sauce with white rice
- Spicy marinated salmon filet over a vegetable stir-fry
