One of my favourite meals in the entire world is tacos. But…. when you’re trying to go as gluten-free as possible, you have to find a solid substitute for the wrap portion. If there is anything the Cheesecake factory taught me, it’s that lettuce wraps are actually a beautiful thing.
Feeds: 2 souls
Ingredients: 1 package of lean ground beef, 1/2 cup of Old El Paso taco mix, grated cheddar cheese (depending on how much you love cheese, so if you’re me- a LOT), 1 tomato (diced into 1-inch pieces), plain yogurt, salsa, 1/2 head of iceberg lettuce (washed and ‘peeled’ for large wrap-sized pieces), 1 small bowl of lime pepper kettle cooked chips for an added crunch!
Instructions: cook the ground beef with taco mix in a frying pan. While the beef is cooking, grate cheese, slice tomatoes, and wash and peel lettuce. Top lettuce wraps with all ingredients above!
Tacos can be paired with many wines. I would highly recommend a Pinot Noir or Syrah, or even a jammy Cabernet Sauvignon (possibly from California). Try Alceño Premium 50 Barricas Syrah 2012 from Jumilla, Spain!
Another great thing about this easily paired dish is that if you’re a beer drinker, a hoppy IPA really does the trick. Try: Muskoka Mad Tom IPA
