Chicken Souvlaki Salad with Homemade Tzatziki

I do cook this type of meal a LOT, but I’m not too worried about it. It’s a classic and absolutely delicious recipe. There are many things you can do with the ingredients

Processed with VSCO with f2 preset in this dish- either wraps, a salad, or a chicken and rice dish with a side salad- your choice!

Ingredients for the main dish: 1 chicken breast (cut into 1-inch cubes), 1/3 cup of greek salad dressing, 1 cup parmesan rice, 1 cup of Kalamata olives (pitted and halved), 1/2 cup feta cheese (cut into 1/2-inch cubes), 1/2 head of iceberg lettuce (washed and chopped), 1 lemon (cut into thick slices).

Processed with VSCO with g3 presetIngredients for Tzatiki sauce: 2 cups plain yogurt, 4 cloves garlic, 1 cup fresh dill, 2 tbsp fresh lemon juice and 1 tsp ground black pepper.

Instructions for the main dish: preheat oven to 425 degrees. Cut chicken into 1-inch cubes, put in baking dish and cover in greek salad dressing. Bake in the oven for 35 minutes. While the chicken is cooking,
cut up Kalamata olives, feta cheese, lettuce, and lemon to prep. Place the rice in the rice cooker (or boiling water) for approximately 20image3 minutes, until soft. Top lettuce with olives, chicken, feta, rice and tzatiki sauce.

Instructions for Tzatiki sauce: using a food processor, blend garlic and dill, then mix with plain yogurt, lemon juice and pepper.

Serve this with any fresh or zesty white wine- preferably from Greece.
