I’m a sucker for lunches that are so delicious, it’s all I can think about all morning at work. This is one of those!
I love Greek pasta salad, I just didn’t want to be so lethargically full and bloated all day, so I figured gluten-free would be the way to go! It did not disappoint.
I purchase my gluten-free pasta from Food Basics in the gluten-free section or the pasta section with the non-gluten-free products. Catelli is the brand that makes awesome gluten-free pasta along with regular pasta. If you’re someone who just wants a Greek salad recipe (not gluten-free), just swap it out with Catelli’s regular penne pasta.
This lunch takes just a little bit of prep (approximately 20 minutes or so) of simply chopping up the veggies and feta while boiling the pasta.
Ingredients: 1 package gluten-free penne (I use Catelli), 1/2 cucumber (sliced in halves), 1/3 cup feta (crumbled), 1 whole red pepper (sliced in 1 inch pieces), 1/3 cup chopped red onion (chopped in small pieces), 1/3 cup Kalamata olives (pits removed and sliced into halves), 1/2 cup of Greek salad dressing, pepper to taste.
