Today was a really gorgeous day so we decided to hit the beach and a friend’s pool to ward off the 32 degree heat. We quickly realized we were in the mood for something fresh and summery to match the beautiful weather.
I had this salad last summer on a patio in Montreal and it brought me back to fond summery feelings and cravings for lobster.
Ingredients: 1 package lobster meat (or fresh lobster meat from a grocery store if you can), 1 handful fresh mint, 6 sticks watermelon (sliced into 1-inch cubes), 1 cup cubed feta cheese, 1/2 cup melted butter, 1 tbsp garlic powder
Instructions: slice watermelon and feta. While doing this, melt butter in a pan with garlic powder. Align lobster in the centre of the plate, line watermelon chunks beside and top the dish with feta. Pour the butter sauce over everything, then add small pieces of mint.
