A Cajun Catch

16244348_10154754281730428_1285243900_nTonight I continue on my gluten-free and healthy dinner streak! We tried a catch of the day from the Merivale Fish Market, which was catfish.


Cajun Lime Catfish Filets with a Chickpea and Avocado Salad:

Serves: 2 people

Ingredients for the Dish: 2 catfish filets, 2 avocados, 1 can drained and rinsed chickpeas, 1/3 red onion, 1/3 cup of feta cheese, 1 can drained corn, 1 tbsp olive oil, 1 tbsp lemon juice, fresh ground pepper

Ingredients for the Cajun Seasoning: 1/4 cup of kosher salt, 1/4 cup cayenne, 1/4 cup 16343712_10154754485970428_2054872677_npaprika, 1/4 cup garlic granules, 2 tbsp onion granules, 2 tbsp dried oregano,  1/4 cup ground black pepper, 2 tbsp dried thyme, 1/4 cup lime juice, 1 whole lime

Instructions: preheat oven to 425 degrees. Mix chickpeas, corn, onion, feta, red onion, olive oil and lemon juice together and top with sliced avocado. Mix all cajun spice ingredients together with 1/4 cup lime juice and pour over filets. Top dish with fresh lime slices. Bake for 40 minutes.
