Spicing Up Our Tuesday

16176631_10154736223570428_1174463650_nI found myself craving a MacKinnon Brothers beer and something spicy, so this is what Tuesday night’s dinner looked like!

Blackened Pineapple Chicken with Guacamole and Cranberry Fig Crackers:

Ingredients: 2 chicken breasts, 1/2 can of Dole Pineapple chunks, jerk spice, 4 avocados, 4 cloves of garlic, 1/3 of a red onion, 2 tbsp of lime juice, and Grissol cranberry fig crackers

Instructions: preheat the oven to 425 degrees, place chicken breasts and pineapple chunks in a baking dish and completely coat them with jerk spice (depending on how spicy you want your chicken to be), bake for 35 minutes exactly. While the chicken is cooking, blend 4 avocados, 4 cloves of garlic, 2 tbsp of lime juice and 1/3 of a red onion in the food processor until smooth with some chunks of avocado (again, depending on your preference of thickness of guacamole). Dish it out, dip into the guac and enjoy!
